# Step-by-Step Guide:

01 - Season chicken pieces with salt and black pepper.
02 - Heat butter and olive oil in a large pot over medium-high heat. Add chicken and cook for 5 to 6 minutes until lightly browned and cooked through. Remove chicken and set aside.
03 - In the same pot, sauté onion, carrots, and celery for 4 to 5 minutes until softened. Add minced garlic and cook for 1 minute.
04 - Stir in flour and cook for 1 to 2 minutes to form a roux.
05 - Gradually whisk in chicken broth, whole milk, and heavy cream. Stir in Dijon mustard, dried thyme, dried parsley, paprika, and season with salt and pepper.
06 - Bring mixture to a simmer and cook for 5 minutes, stirring frequently until thickened.
07 - Cook egg noodles separately according to package instructions. Drain and set aside.
08 - Return chicken to the sauce with peas and simmer for 2 to 3 minutes until peas are heated and chicken is warmed through.
09 - Add cooked egg noodles to the sauce and toss to coat evenly.
10 - Sprinkle chopped fresh parsley on top before serving, if desired.

# Expert Tips:

01 -
  • Its the kind of meal that makes everyone put down their phones and actually talk to each other
  • The sauce develops this incredible velvety texture that feels like a warm hug
  • Leftovers taste even better the next day if they last that long
02 -
  • The sauce will seem thin at first but it thickens dramatically as it simmers so be patient and resist adding more flour
  • Room temperature milk prevents the sauce from breaking and creates that perfectly smooth velvety texture
03 -
  • Cook your noodles slightly less than the package directs since they will finish cooking in the hot sauce
  • Grate a little fresh nutmeg into the sauce for an almost imperceptible depth that people notice but cant quite identify
